Instructions: Split peppers; wash and remove seeds and membrane. Parboil for 5 minutes; drain. Cook beef until it loses red color. Pour off fat. Mix beef, rice and seasonings. Add 1/4 cup Creole sauce. Pack peppers with mixture and put into large shallow baking pan. Pour about 1 1/2 cups Sauce around peppers. Cover; bake in preheated 350 degree oven for 45 minutes. serve remaining Sauce heated.
Makes 8 servings Creole Sauce Cook 1 chopped onion and 1/2 cup diced celery in 2 tablespoons butter for 5 minutes. Add 1 can (15 1/2 ounces) spaghetti sauce, 1 can (8 ounces) tomato sauce, 1 cup water, 1 bay leaf, 2 whole cloves and salt and pepper to taste. Simmer for 15 minutes. Makes 3 cups.
