Instructions: Heat 1 tbs oil in a frying pan and fry chicken for 3-4 minutes until golden. Add 1 tbs Creole Seasoning. Cut the pineapple slices into chunks and add to the pan with 2 tbs of the pineapple juice.
Meanwhile, in a separate frying pan, heat the remaining oil and fry the potatoes and onion until browned. Stir in the remaining Creole Seasoning, sweetcorn and red pepper and fry for a further 2-3 minutes. Serve the chicken with the pan-fried vegetables. Email this Recipe:
