Ingredients:

400 gm Tomatoes, canned, chopped.
2 x Onions, peeled and chopped.
1 sm Courgette, sliced.
1 x Capsicum, green deseeded and sliced.
1 x Garlic cloves, or two, crushed.
1 pch Mixed herbs
Salt
Black pepper, freshly ground.
1/2 cup Cheese, cheddar, low-fat, grated. negligable.
Instructions:
Instructions: Put all the ingredients except the cheese in a saucepan and simmer for 10 minutes, seasoning to taste with salt and freshly ground black pepper.

Fill the pancakes with the ratatouille- putting 2-3 tbs of it in the middle of each pancake- then roll them up and put them in an ovenproof dish.

Sprinkle the cheese over them and bake for 10 minutes ay 350^F/180^C.
