Instructions: Peel, core and dice the apple 1/2 cm. Cook gently in the butter and lemon juice until tender. Stir in apricot jam and calvados, allow to cool.
Whip cream until stiff. Fold in vanilla, apples and almonds. Spoon about 1-2 tblsp of apple cream onto one end of crepe and roll up. Place on a flat baking tray. Dust liberally with icing sugar and place under a hot grill 1 minute to glaze. Transfer to serving dish and serve immediately. Crepes and cream can be prepared in advance. Email this Recipe:
