Instructions: Chop the onion potato and carrot into chunks.
Heat the oil in a pan and saute for 12 minutes. Add the stock bring to the boil and add all the herbs. Gently cook for 15 minutes. Add the butter and liquidize the soup until smooth. Serve immediately in pre warmed bowls with some croutons. This is a vitamin injection!
