Instructions: In a large pot, heat olive oil over medium heat. Saute onion and leek, until tender. Add Clamato, wine, bay leaf, thyme, pepper and saffron. Simmer uncovered 40 minutes, Add fish and mussels or clams; simmer 10 minutes or longer until mussels or clams open. Place a slice of toasted bread in each soup bowl. Top with Bouillabaisse. Sprinkle parsley over top.
