Instructions: CLEAN and chop the spinach roughly. Blanch and drain well. In a salad bowl, put the spinach leaves, cucumber slices, mushrooms and celery.
Refrigerate the vegetables. To prepare the dressing: Mix honey, lemon juice, salt and pepper in another bowl and refrigerate till serving time. Add salad dressing to the chopped vegetables just before serving. Mix lightly. Serve chilled. For a variation, substitute spinach with lettuce. And add sliced tomatoes, capsicum and radishes.
