Instructions: Wash the okra and dry thoroughly.
Cut off the tops and then cut into halves lengthways. In a separate dish mix together the ponder spices and salt. Add the okra and coat well. Sprinkle in the rice flour and mix. Heat a little oil in a frying pan. When it is hot reduce the heat and drop in a few okra at a time. Keep turning frequently until crisp golden and done. Serve hot as the okra will become leathery when cold. Uses rice flour in the same way as one would use breadcrumbs for a crisp finish. Serves 4 Email this Recipe:
