1 pkt Waitrose Unsmoked Rindless Back British Bacon
----------------- THE SALSA ----------------
10 x Waitrose Organic Cherry Tomatoes, quartered (10 to 12)
15 ml , (1-2tbsp) fresh, (15 to 30) coriander, stalks removed
20 ml Waitrose Extra Virgin Olive Oil, (4tsp)
5 ml Parmesan cheese, (1 heaped tsp)
Salt and freshly ground black pepper
----------------- THE SANDWICH ----------------
1 loaf of sunflower seed and honey bread, halved, sliced lengthways
Butter to spread
Instructions:
Instructions: Place the bacon under a preheated medium grill and, turning occasionally, cook for 4-6 minutes or until crisp and thoroughly cooked.

To make the salsa add all the ingredients into a food processor and process briefly so the ingredients are well mixed but still chunky.

Alternatively finely chop the salsa ingredients with a sharp knife and mix well.

Butter both slices of bread and top one slice with a large handful of salad leaves. Add 3 or 4 slices of the bacon and top with the salsa.

Place the bread slices together and serve immediately.

NOTES : A convenient and delicious sandwich snack that is simple to prepare and takes only minutes to cook. Serve as a brunch or late night snack.
