Instructions: Place the bacon under a preheated medium grill and, turning occasionally, cook for 4-6 minutes or until crisp and thoroughly cooked.
To make the salsa add all the ingredients into a food processor and process briefly so the ingredients are well mixed but still chunky. Alternatively finely chop the salsa ingredients with a sharp knife and mix well. Butter both slices of bread and top one slice with a large handful of salad leaves. Add 3 or 4 slices of the bacon and top with the salsa. Place the bread slices together and serve immediately. NOTES : A convenient and delicious sandwich snack that is simple to prepare and takes only minutes to cook. Serve as a brunch or late night snack. Email this Recipe:
