For batter
2 tbl oil
250 x 300ml water or enough
1/2 tsp salt
1/4 tsp ground black pepper
1 sm egg
Sift
1/2 tbl plain flour
1/2 tbl rice flour
1/4 tbl corn flour
3/4 tbl baking powder
3 tsp custard powder
600 gm fish fillet, (preferably garoupa), cut into thick slices
1/4 tsp salt
Instructions:
Instructions: Lightly season fish fillet slices with salt and pepper.

Combine all sifted dry ingredients in a mixing bowl. Make a well in the centre of the mixture and add in water gradually.

Add in beaten egg and stir well to mix. Add oil to blend and mix into a batter with the consistency of pancake batter.

Strain the batter.

Dip the fish slices into the batter and deep-fry in hot oil until crispy and golden. Serve the crispy deep-fried fish dipped in chilli sauce.
