Instructions: Preheat oven at 375. Cut chicken into pieces about 1"x3-1/2". In a shallow bowl, combine cornflake crumbs, cornmeal, Parmesan cheese, and red pepper. Dip each chicken piece in flour, then in a little water. Roll in cornmeal mixture to coat. Spray a baking sheet with cooking spray. Bake for 20 to 30 minutes or until no longer pink.
