Instructions: Chinese parsley sprigs, for garnish (or cilantro)
Slice beef into thin strips about 3 to 4 inches in length. In a bowl, combine beef, lemon grass, garlic, fish sauce, brown sugar, black pepper, oil, rice flour and Chinese parsley roots. Mix well. Marinate beef in the refrigerator overnight. In a wok, heat the oil for deep frying on medium heat until oil is hot. Place the meat, piece by piece, in the oil and fry until the meat is dry and cooked, about 15 minutes. Remove meat, drain thoroughly on absorbent paper towels. Let cool before serving. Serve at room temperature with spring roll sauce, if desired. Garnish with Chinese parsley or cilantro sprigs. Email this Recipe:
