1/2 lb sweet potatoes see note 1
1 x egg
1 x Clove garlic minced
1/2 cup dry breadcrumbs
1/2 cup parmesan cheese freshly grated
1 tsp dried basil
Instructions:
Instructions: 1. Peel potatoes; cut each lengthwise into 8 wedges. In large bowl, whisk together egg, garlic, and 1 tbsp water. Add potatoes; toss to coat evenly.

2. In shallow dish, combine bread crumbs, grated cheese, basil, and oregano; roll potato wedges in mixture to coat well.

3. Bake on greased baking sheet in 425F (220C) oven for 15 minutes. Turn wedges; bake for 12 to 15 minutes longer or until potatoes are tender.

NOTES : Note 1: the sweet potatoes should total about 2 1/2 lb or 1.25 kg, which equals 3 sweet potatoes according to the recipe.
