12 lb Roma tomatoes, (12 to 15)
2 tbl Bottled lemon juice / per qt. jar
1 tsp Salt per quart jar
Instructions:
Instructions: Directions : Wash tomatoes. Dip in boiling water for 30-60 seconds, then dip in cold water. Peel off skins and remove cores. Leave whole or halve. Place lemon juice and salt in jars and fill the jars with raw tomatoes, leaving 1/2 inch headspace. Press tomatoes in the jars until spaces between them fill with juice and seal lids. Place jars in a large pot of boiling water, with a 1-2 inch level of water covering the tops. Reduce heat to maintain a slow boil. Allow jars to sit in boiling water for approximately 1hour to seal lids. Remove and let cool completely.
