Instructions: Directions: In a food processor, combine the yellow onion, carrots, celery, salt pork (cut into cubes). Pulse to chop fine. In a large saucepot, heat the olive oil. Add the vegetable-pork mixture and sautee until browned. Add the red wine and stir to combine. Add the tomato paste and strained tomatoes. Season with red pepper flakes, salt and pepper. Simmer for 30 minutes and serve over your favorite pasta.
