3 lb boneless pork butt cut into 1 1/2" pieces
1/2 oz diced tomatoes with chilies
2 x onions halved and cut into 1/2" thick slices
1 x clove minced
1 tbl chili powder
1 tsp ground cumin
1 tsp salt
3 tbl tomato paste
3 tbl all-purpose flour
19 oz red kidney beans drained and rinsed
Instructions:
Instructions: In crockpot combine pork, tomatoes, onion, garlic, chili powder, cumin and salt. Cover; cook on low 8 hrs or until pork is tender and cooked through. Using slotted spoon remove pork and onions from pot. Pour liquid into pot over medium-high heat; stir in tomato paste. Whisk in flour. Boil, whisking, until thickened, 2 mins. Add pork, onions and beans to pot; heat through. Serve chili with sour cream and cilantro, if desired. To make ahead and freeze: Cool chili completely before freezing in freezer bags or containers. Thaw in refrigerator or microwave oven before reheating over low heat.
