300 gm Crocodile meat, cut into thin slices
30 gm Peanut oil
20 gm Basil leaves
20 gm Parsley
5 gm Garlic, chopped
20 x White wine vinegar
200 ml Olive oil
1 x Mango
Instructions:
Instructions: 1. Heat peanut oil in a fryingpan, saute seasoned crocodile pieces for about 3 min then set aside and keep warm.

2. Blend basil, garlic, parsley vinegar and olive oil in a food processor until smooth, set aside.

3. Slice mango thinly and arrange on plate. Place crocodile slices in the cente, drizzle basil sauce around the plate and garnish with fresh herbs.
