Recipe for Crostini of Salmon Rillete with Coriander

Ingredients:

12 x Bread crostini
140 gm Cooked salmon fillet, bought in a supermarket packet (5z)
55 gm Butter, (2oz)
1/4 x Red onion
1/4 x Diced red chilli
Flat leaf parsley
1 x Clove garlic
Fresh coriander
Instructions:
Instructions: Finely dice the red onion and garlic and cut the red peppers in small dice.

Remove any skin or bones from the salmon and flake the flesh up into a bowl.

Combine this with the softened butter and add the onion, peppers and garlic. Season the mix well and add a handful of chopped coriander.

Mix all the ingredients together and place into the tartlets.

These can be made the day before and stored in the fridge, but remove before hand to allow the mix to soften slightly. This can also be placed in a mould with clingfilm and chilled. Then turn out and serve with a nice salad an ddressing (i.e chicory, rocket,lemon and herb).
