Yield:

Ingredients:
Amount Ingredient
1 x narrow French bread baguette (about 8 oz.)
4 oz light cream cheese
1/2 cup nonfat or low-fat ricotta cheese
2 tsp dried oregano
2 tsp dried basil
1 cup canned pizza sauce
1 med yellow onion cut into paper-thin wedges
1/2 cup Parmesan cheese grated
----------------- GARNISH: ----------------
Instructions:
Instructions: Split bread in half lengthwise. Pull out some bread from center of each half, leaving a 1/2-inch shell. Place bread halves on a large baking sheet.

Preheat oven to 400 degrees F. In a small bowl, using a fork, beat cream cheese and ricotta cheese, oregano, and basil. Spread mixture along length of both bread halves. Place a strip of pizza sauce and a single layer of onions over cheese mixture. Sprinkle with Parmesan cheese.

Bake for 30 minutes or until onion is tender and tips are slightly blackened, but make sure crust is not too dark. Sprinkle with parsley if desired. Cut crosswise into narrow strips.

Makes 6 to 8 servings.

NOTES : Oven-caramelized onion wedges set off the creamy herbed filling on this crusty hot appetizer. Wrap and freeze the hollowed-out bread crumbs to use later for meatloaf or meatball mixtures. The bread can be toasted, tossed with melted butter; and sprinkled over casseroles.
