Instructions: Season meat with salt and pepper. Pour lime or lemon juice over roast. Place onion slices over roast. Let stand in refrigerator 1-2 hours. Split meat in places and add garlic plugs in slashes. Roast at 325 degrees for 1 1/2 - 2 hours or 35-40 minutes per pound.
