2 gal large cucumbers
2 cup lime
1/2 cup water
1 cup vinegar
1 sm bottle red food coloring
1 tbl alum
----------------- SYRUP ----------------
2 cup vinegar
6 cup sugar, (6 to 9)
2 cup water
8 stk cinnamon
Instructions:
Instructions: Peel and cut centers out of 2 gallons large cucumbers and slice round

(will look like apple rings). Soak in 2 cups lime and 8 1/2 cups water.

Let stand overnight or 24 hours. Drain and wash. Soak for 3 hours in cold water. Drain.

Mix together vinegar, red color and alum and add enough water to cover cucumbers. Simmer for 2 hours. Drain. Mix syrup, heat, pour over rings and let stand overnight. Drain and re-heat syrup. Pack in jars and seal hot.

Place in hot water bath for 5 minutes. More vinegar and water may be added, if needed, to cover cucumbers.
