3 tbl olive oil
1 x clove garlic, peeled and smashed (I use 4!)
1 x (10 oz.) can baby clams (reserve juice)
2 x seedless cucumbers, diced (skin left on)
1 tsp salt
pepper to taste
Instructions:
Instructions: Heat oil over low heat and saute garlic until browned, then discard garlic.

Drain clam juice into pan, stir in cucumbers, salt and pepper. Cook, uncovered for about 15 minutes. Add clams and cook at very low heat for about 5 more minutes, stir in parsley and cook about 1 minutes more. Serve over any noodle type pasta.

note: If you have access to fresh clams or mussels, both work very well with this recipe, about 2 dozen of each will do the trick.
