2 x cucumbers peeled, seeded,
and coarsely chopped
1 x green onion coarsely chopped
1 tbl lemon juice
1 ct sour cream (16-ounce)
(light sour cream may be substituted)
1 cup half-and-half
(fat-free half-and-half may be substituted)
1 tbl minced fresh dill
1 tsp salt
1/4 tsp freshly-ground black pepper
1/8 tsp hot sauce
Instructions:
Instructions: Process first 3 ingredients in a blender or food processor until smooth, stopping to scrape down sides.

Pour into a large bowl; stir in sour cream and next 5 ingredients. Cover and chill 2 hours. Garnish soup, if desired.

This recipe yields 4 cups.
