Instructions: Peel the carrot and slice lengthwise into 1/2 inch-wide "planks." Using a vegetable peeler, shave strips from the edge of each plank until it is too small to hold. Peel the cucumber half, cut it lengthwise into sections and shave strips from each. Slice the red cabbage as thinly as possible. Toss the carrot, cucumber and cabbage in a bowl with the bean sprouts and dressing.
Editors note: Raw sprouts have been linked to food-borne illnesses because of bacterial contamination of the seeds. Some health officials recommend not eating any kind of raw sprouts. Email this Recipe:
