4 lrg cucumbers peeled, seeded,
and chopped
1 ct low-fat plain yogurt - (16 oz)
1 x garlic clove
1/4 tsp dried dill weed
Instructions:
Instructions: In a blender or a food processor that has been fitted with its metal cutting blade, puree all the ingredients until smooth, scraping down the sides of the container as necessary.

Transfer to a large bowl, cover, and chill for at least 2 hours before serving; serve chilled.

This recipe yields 4 servings.

Comments: For an extra-sweet touch, add 1 tablespoon honey to the ingredients before blending. Its nice to garnish each serving with a few sprigs of fresh mint and a cucumber slice.
