Ingredients:
Amount Ingredient
1 med cucumber
1 x scallion (spring onion), green and white parts,
finely chopped
1 cup (250 ml) plain yogurt
3 tbl (45 ml) chopped fresh mint leaves
2 tbl (30 ml) olive oil
1/2 tsp (2 ml) ground cumin
Cayenne pepper to taste (optional)
Instructions:
Instructions: Cut the cucumber in half lengthwise, scoop out and discard the seeds.

Chop the cucumber finely and combine with the remaining ingredients.

Serve with raw vegetables or bread for dipping.

Makes about 2 cups

(500 ml), to serve 6 to 8.

Serve with fresh vegetables batons.
