Instructions: Rinse cucumbers; with a sharp-tined fork, score sides of cucumbers lengthwise. Trim and discard ends; thinly slice cucumbers crosswise and place in a bowl. Add salt and mix. Cover and chill at least 30 minutes or up to 2 hours. Rinse well in a colander under cold running water; drain. Return to bowl.
Add vinegar and sugar; mix. Cover and chill, stirring occasionally, until cold, at least 45 minutes or up to 1 day. Just before serving, drain cucumbers and put in a bowl. Add half the dill and mix; sprinkle with remaining dill. This recipe yields 10 to 12 servings. Comments: Prepare through step 2 up to 1 day ahead; cover and chill. Email this Recipe:
