Instructions: Score the skins of the cucumbers with the tines of a fork and slice very thin. Place in a salad bowl with the red onion. Combine the yogurt, lemon juice, garlic and salt. Pour the mixture over the cucumbers and garnish with fresh mint. Chill for 1 hour before serving.
