2 tsp canola oil
1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup diced carrots
2 x tart apples peeled
cored and sliced thin
1/4 cup unbleached white flour
1 tsp curry powder
5 cup low-fat low-sodium chicken broth
1 cup canned tomatoes drained
and cut into pieces
1 tsp minced parsley
2 whl cloves
1 tsp sugar
1/2 tsp mace
fresh ground pepper
Instructions:
Instructions: Preparation - 25 minutes

1. Heat the oil in a stockpot over medium-high heat. Add the onion, celery, carrots, and apples and saute for 5 minutes.

2. Mix together the flour and curry powder. Sprinkle over the mixture in the pot.

3. Add the broth and cook for 2 minutes. Add the tomatoes, parsley, and cloves.

4. Add the sugar, mace, pepper, and salt. Cook, covered, for 20 minutes.

Discard the cloves and serve.
