Coat a medium saucepan with cooking spray; place over medium-high heat until hot. Add onion, curry, and garlic; saute 1 minute. Add 1/4 cup broth; saute 3 minutes or until onion is tender. Add remaining 1 1/4 cups broth and apple juice; bring to a boil. Add rice; cover, reduce heat; and simmer 20 minutes or until liquid is absorbed. Remove from heat; stir in dates and cashews.
