1 x chicken, No.18
60 gm butter
1 x onions, medium
3 slc bacon
2 tsp curry powder
1/3 cup flour, plain
1 cup milk
1/2 cup seasoning, from roasted chicken
1 cup cheese, grated
2 x eggs
1/2 cup milk
2 cup breadcrumbs
Instructions:
Instructions: Roast chicken, remove meat and dice 1cm cubes

Dice onion and bacon

Melt butter in a pan, add onion, bacon and curry powder and cook, stirring for 2 minutes. Stir in flour and cook 1 minute. Gradually add milk, stirring as you. Stir until mixture boils and thickens. Remove from heat and stir in chicken, seasoning and cheese. Spread mixture onto a tray covered with plastic wrap and refrigerate until cold.

Shape mixture into croquette shapes, dip into combined eggs and milk and coat in breadcrumbs.

Deep fry, a few at a time, until golden brown, about 3-4 minutes.

Croquettes can be made 24 hours in advance.

Makes about 16.
