Ingredients:

1/4 cup mayonnaise
2 tbl celery, minced
2 tbl onion, minced
1 tsp curry powder
1 cup crab meat
Salt and freshly ground pepper, to taste
4 x heads Belgian endive, spears separated
Instructions:
Instructions: Combine the mayonnaise, celery, onion and curry powder in a bowl; mix well.

Stir in the crab meat. Add salt and pepper; Mix well.

Place 1 heaping teaspoon of the mixture at the base of each endive spear and place on a serving tray. Top with alfalfa sprouts.

The crab meat mixture may be prepared up to 8 hours in advance and chilled until ready to serve.

Note:
Endive spears make an impressive presentation when arranged end to end on a platter. At Christmas time, arrange fresh cranberries down the center of the tray.
