Instructions: Cook rice according to directions; when done, place in a salad bowl. Add celery, onions and artichoke pieces that have been cut up. When you open the artichokes, pour the oil into the mayonnaise to make the dressing. Mix well. Pieces of chicken added makes it a complete luncheon entree. (Can also use Uncle Bens brown and wild rice with mushrooms.)
