Sweet potatoes give potato salad an Indian twist with a sweet and spicy
curried dressing.
2 lb sweet potatoes, peeled, diced
1/2 cup each: yogurt, mayonnaise
1 tbl curry powder
1 x piece (1 inch) fresh ginger root, minced
1 tsp brown sugar
1/2 cup golden raisins
1/3 cup sliced almonds, toasted (see note)
4 x green onions, chopped
Instructions:
Instructions: 1. Place potatoes in large pot; fill with cold water to cover. Heat to a boil; simmer potatoes until tender, about 7 minutes. Drain, set aside.

2. Combine yogurt, mayonnaise, curry powder, ginger root and brown sugar in medium bowl. Add potatoes, raisins, almonds, onions and salt and pepper to taste; toss to coat.

Note: To toast almonds, place in small, dry skillet over medium heat, stirring frequently, until golden, about 6 minutes.
