1 lb potatoes
1 x egg yolk
1 x onion chopped
1 tsp oil
1 x clove garlic crushed
2 sm leeks finely chopped
1 stalk celery finely chopped
2 x carrots finely chopped
2 tsp curry powder
2 tbl fresh parsley chopped
milk (optional)
salt and pepper
4 tbl fresh bread crumbs for coating
Instructions:
Instructions: 1) Boil the potatoes in salted water until tender, then drain. When cool enough to handle, peel and mash them with the egg yolk.

2) Meanwhile, cook the onion slowly in the oil until softened. Add the garlic, leeks, celery, and carrots, and continue to cook, stirring occasionally, until the vegetables are tender, adding water if needed to cook without additional oil. Stir in the curry powder for 1 minute. Mix the curried vegetables and the parsley into the potatoes. Add a little milk if the mixture seems dry. Add seasoning, and form into 8 flat cakes.

Coat the cakes in bread crumbs, then fry in oil for about 3 minutes on each side until golden.
