1 tsp oil
1 cup yellow squash cubed
1 med onion sliced thin
3/4 cup carrot sliced thin
1 x clove garlic minced
6 cup water
1 tbl chicken bouillon granules
1/2 tsp curry powder
1 tsp coriander
1/4 tsp cumin
1 cup broccoli flowerets
1 cup cauliflower flowerets
Instructions:
Instructions: Coat dutch oven with cooking spray; add oil. Place over med-high heat until hot. Add squash, onion, carrot, and garlic; saute until crisp-tender. Stir in water, bouillon granules, curry powder, coriander, and cumin. Bring mixture to a boil; cover, reduce heat, and simmer 30 minutes. Add broccoli, cauliflower, and rice.

Cover and cook an additional 25-30 minutes or until rice is tender. Ladle soup into individual bowls.
