Instructions: Microwave the potatoes until cooked through, then cut into chunks. Chop the onion and cook in a little oil. Add the curry powder and can of tomatoes. Cook for a few minutes, then add the beans and potatoes. Leave it simmering while you make rice, then serve the curry mixture over the rice. Top with chopped scallions.
Notes: I used sweet curry powder. This would benefit from some fresh garlic and chiles. I used jasmine rice. The sauce got thick, you might want to add a little water or tomato juice if too thick. Butter beans are big yellow lima beans. I left the skin on the potatoes. I used canned whole tomatoes and chopped them up (swish a knife around in the can). Rotel tomatoes would have been really good too. NOTES : I came across this recipe today and had all the ingredients handy, it was a great dinner. I cant remember where I found it, it could even have been eat-lf but I scanned the recent digests and didnt see it there. Email this Recipe:
