2 x chicken breasts
2 cup water
5 x potatoes chopped
5 x carrots chopped
1 x yellow onion chopped
1 x green pepper chopped
2 stalk celery chopped
1 can mushrooms
1/2 cup frozen peas
1/2 cup frozen corn
1 tsp salt
1/2 tsp pepper
2 tsp curry powder
1 tsp cornstarch

couple of chicken breasts in a big pot with 2 cups of water. After it begins to boil, I slice into bite-sized chunks 5 potatoes, 5 carrots, one yellow onion, one green pepper and 2 stalks of celery and add to the pot. When they have begun to soften, I add a can of mushrooms and a half cup each of frozen peas and corn. Turn it down to low heat when it begins to boil and simmer for 30 minutes. Add 1 T. of salt, 1/2 T. of pepper and 2 T. of curry powder. Dissolve 1 T. of corn

starch in a cup of water and mix into stew. Let it simmer for another 10 minutes and it is ready to serve over rice. You can adjust the seasonings to your taste and add more corn starch if you like it thicker.

This recipe serves 8 easily. Hope you like it.
