Yield: About 3 dozen patties In a large nonstick skillet, heat part of the oil to 375 degrees. Mix together the mashed potatoes, masa harina, baking powder, corn, cheese, salsa, salt, pepper and water. Form the mixture into patties and fry, turning them once, until they are golden brown, abut 6 minutes. Add more of the oil as needed. Serve them hot or cold. * Masa harina is ground dried corn with lime added - the foundation of tortillas and therefore of much of Mexican and Central American cuisine. It also is used to make tamales. It has become available in supermarkets in recent years; the Quaker brand is fine for this. Email this Recipe:
