Instructions: Peel the cucumber and slice thinly into a shallow dish.
Sprinkle with salt and sugar and drizzle over the vinegar. Turn so everything is evenly mixed then set aside for at least 1/2 an hour. Just before serving drain off all liquid and sprinkle with chives or dill. Lovely with cream cheese on granary bread.
