Instructions: Coarsely chop the tomato and finely chop the onion. Pit the avocado and cut into cubes. Place the tomatoes, onions, and avocados into a bowl.
Drain the chilies and add to the bowl. Add the corn to the bowl and stir lightly. Add the juice of the lime into the bowl, along with salt and pepper to taste. Stir lightly, mixing well. Allow to stand at room temperature for 30 minutes. Serve with tortilla chips. Email this Recipe:
