bar bakers coating chocolate |
| 1/4 cup |
cocoa |
| 2 cup |
cream |
| 2 stk |
butter |
| 1 tsp |
vanilla |
| 2 oz |
orange liqueur |
| 2 oz |
amaretto |

Scald cream 180 to 190F. |

Remove from heat. |

Stir in chopped bittersweet chocolate and whisk smooth. |

Add orange liquer and amaretto. |

Cool to below 90Fand add butter. |
| |
Cool to room temperature (until firm enough to scoop). |

Scoop using a 1.5 oz scoop then refrigerate. |
