1/2 cup chopped walnuts omit these for lower fat I used about 1/3 cup and that was more
than enough
3/4 cup chopped dates (3/4 to 1) again 3/4 was enough
1 tsp baking soda
1 cup sugar
1 tbl butter I used ICBINB light
1 cup boiling water
1/2 cup flour
1 x egg
Instructions:
Instructions: Place nuts, dates, soda, sugar, and butter in a bowl. Pour boiling water over, and break apart dates if they are clumping. Add flour and mix, then egg and vanilla and mix well. Pour into large loaf pan and bake at 350 for
50-60 minutes until a cake tester comes out clean. Cool and remove from pan.

Makes one large loaf.

This might make a nice replacement for fruit cake-type gifts. Great by itself
or with a touch of light cream cheese for breakfast or brunch.

NOTES : I made a date-nut bread last night, that was very scrumptious. I used the
original recipe, because I was hoping to duplicate my grandmothers rich
dark bread, but unfortunately, this recipe was not the same (but it was
wonderful, just not the same). I will post the original, because if you omit
the nuts the original recipe probably falls well within the 30% and you could probably cut the butter in half or omit it entirely.
