Instructions: Beat butter at medium speed with an electric mixer until fluffy; gradually add brown sugar, beating well. Add egg and vanilla, mixing well. Stir in chopped dates; let stand 5 minutes. Beat at high speed 3 minutes.

Combine flour, baking soda, baking powder, and salt; gradually add to butter mixture, mixing well. Stir in chocolate chips, chopped walnuts, and coconut; drop by level tablespoonfuls onto lightly greased cookie sheets. Bake at 350 degrees F. for 10 to 12 minutes or until lightly browned. Remove to wire racks to cool.

Yield: about 3 dozen
