Instructions: In mixing bowl, cream eggs and sugar together. Add flour, baking powder, nuts, dates and vanilla. Thinly spread mixture on cookie sheet. Bake at 375 degrees about 15 minutes until crispy but not hard. Cool and then crumble mixture and mix with whipped topping and marshmallows.
Makes 1/2 gallon. Diana Says: My aunt made this salad for over 50 years. She learned it from her aunt. My aunt had made the salad for a family reunion. She became ill and died without going to the family reunion. Her daughter served the salad at the family wake the night before the funeral. We figure that my aunt was the only person to make a salad for his or her own wake. We love the salad, and I plan to keep making it for all family events. Email this Recipe:
