Blend cream cheese and cointreau in processor. Leave at room temperature for 2 hours. Make a slit lengthwise in each date and return to the freezer. Shortly before serving, arrange dates on serving dish. Pipe the cream cheese mixture into them. Garnish with the orange rind. Cover with plastic and refrigerate. Note: I havent made in ages, but boy, is it good! Dates Stuffed with Cream Cheese and Cointreau! It is from an old catering cookbook. Ive made it with Grand Marnier instead of Cointreau and its even better! Ive made them in advance and thought they tasted even better the next day (but keep refrigerated). NOTES : Betsys Notes: Made 1/4/00. Used Grand Marnier. I thought the cream cheese mixture needed something to cut the very "boozy" taste. I added probably 3/4 c of powdered sugar. I recently tried a recipe from Lynn Nelson (from TNT) for a party and they were a big hit. You probably wont need the 90 dates for the two of you, but adapt as needed. I ended up putting quite a bit of powdered sugar in this cream cheese mixture because it was too "boozy" tasting. Mix in the alcohol and any needed sugar a bit at a time and then taste. I dont even like dates, and I thought these were yummy. Too bad you arent here since I had gobs left over that are in my freezer. Email this Recipe:
