Instructions: Stir all ingredients together in a medium saucepan over medium heat until the pudding starts to thicken, Pour into a medium sized bowl. Chill at least 15 minutes before serving.
Variation: To make with meringue topping, pour thickened pudding into an ovenproof dish. Preheat oven to 350F. Spread meringue over surface of pudding, mounding in the middle & making sure the meringue extends to the rim of the dish. Bake for 20 minutes, until the meringue is set & lightly browned.
