Instructions: Season the chicken quarters with salt and toss in flour.
Beat together the eggs milk and oil. Mix together the breadcrumbs and grated cheese. Dip the chicken quarters first into the egg mixture and then into the breadcrumb mixture. Heat the oil for deep frying. Fry the chicken quarters for 20 minutes until golden brown. Drain on absorbent paper. Fry the parsley for 2 minutes. Arrange the chicken on a dish with the parsley and lemon slices. Serve with tomato sauce (qv). Serves 8 Email this Recipe:
