CUT chicken fillet into 3-cm pieces. Combine all seasoning ingredients in a mixing bowl. Stir in chicken pieces and marinate for 3 to 4 hours or preferably overnight in the refrigerator. Toss chicken pieces in corn flour, shake off excess flour and deep-fry in hot oil until golden brown. Serve with dipping sauce. Dipping Sauce 1 red chilli - finely chopped 2 chili padi (birds eye chilli)- finely chopped 1 1/2 tbsp sugar 1/2 tsp salt 50 ml rice vinegar 2-3 tbsp water Method: COMBINE all ingredients in a small pan.
