500 gm chicken fillet or thigh fillet

2 tsp curry powder
2 clv garlic - pounded
1/2 tsp ground cumin (jintan putih)
1/2 tsp Chinese five-spice powder
1 tbl oyster sauce
1 pch salt
1 tsp sugar
2 tbl ginger juice
Enough corn flour

CUT chicken fillet into 3-cm pieces. Combine all seasoning ingredients in a mixing bowl. Stir in chicken pieces and marinate for 3 to 4 hours or preferably overnight in the refrigerator.

Toss chicken pieces in corn flour, shake off excess flour and deep-fry in hot oil until golden brown. Serve with dipping sauce.

Dipping Sauce
1 red chilli - finely chopped
2 chili padi (birds eye chilli)- finely chopped 1 1/2 tbsp sugar
1/2 tsp salt
50 ml rice vinegar
2-3 tbsp water

Method:
COMBINE all ingredients in a small pan. Bring to a boil until sugar has dissolved. Remove from heat and leave to cool before serving.
