Instructions: Boil carrots in salted water for two minutes or until just done and still crunchy. Rinse immediately in cold water. Wash other vegetables. Put water in a bowl and slowly mix in the flour to make batter. The batter should be creamy and smooth.
Heat oil to 370 degrees in pan. Dip veggies into batter and then carefully put in hot oil a few at a time. Fry veggies until golden brown and then turn to fry other side. Remove with tongs or slotted spoon and drain on paper towels. You may then put veggies in a warm oven to keep them warm until all the veggies have been fried. Place fried veggies on serving platter, season with salt and pepper and serve with lemon slices. Email this Recipe:
